There are alot of ready pack chicken broth in the supermarket, sometimes when I only want an all vegetable soup without meat, I would used them to add more flavour.

My favourite would be Swanson Clear Chicken Broth, cause it said 99% non-fat and no preservative added.









Ingredients (Serving for 2)
1/2 big chinese cabbage (cut into smaller pieces)
1 small carrot (sliced)
1 can Swanson Clear Chicken Broth 
1 can Mili Mushrooms Choice Whole (cut into half)
1 stalk spring onion (diced)

1) Pour the Swanson clear chicken broth in a pot, fill it’s can with water and add in the pot. 

2) Bring the soup to a boil.

3) Add in the chinese cabbage, carrot and mushroom.

4) Let it cook for half hour.

5) Garnish with the spring onion and a pinch of pepper.

Though the soup may look really “clear”, but it taste pretty flavoured, thus you do not need to add anymore seasonings.

This is a quick fixed when I run out of meat, or when I simply want some vegetable soup, along with other meat dishes. 

Usually my meal would consist of one vegetable dish, one meat dish and one soup (with or without meat).  So if I already have two meat dishes, I would go for an all vegetable soup. 

A balance diet is definitely my way of healthy eating style, hehe!
